Easy Lemon Berry Thumbprint cookies
These lemon berry thumbprint cookies are a great twist to the classic jam drop cookie! I love how you can add any jam you like to these, but the lemon in the cookies is what sets it apart!

A fresh and delicious taste that’s not too overpowering makes these lemon thumbprint cookies so good! They are similar to shortbread cookies as they have a lot of butter in them and melt in the mouth.

What You Need
Ingredients
- 3/4 cup butter: I use softened butter. I prefer using butter that is room temperature than butter that has been melted in a pan or microwave. Softened butter seems to give bakes goods a better texture, lighter, softer and fluffier!
- 1/2 cup sugar: I like raw sugar or you can use brown sugar as well. If you use honey or maple syrup be aware you will need to add more flour to get the right consistency.
- 1/4 cup honey: Raw honey as the best flavour! Believe there is a difference between raw honey and processed honey you get from shops. The teddy bear honey is not always that great!
- 1 tsp vanilla: Adds a lovely flavour.
- 2 1/2 cups flour: While I use white spelt flour, normal white flour will do just fine as well!
- 1/2 a lemon zest: This adds a good deal of the flavour so don’t skimp out on the zest of half a lemon!
- 1 tbsp: Lemon juice: Adds a beautiful lemon flavour but it’s not as strong so suggest pairing it with the zest of a lemon.
- 1 egg: Helps to bind the ingredients together.
- 1/2 tsp baking soda
- Jam: You will need whatever flavoured jam you choose! I love how berry flavoured jams go with the thumbprint cookies, but you can use any flavoured jam you like!

Thumbprint Cookie Variations
You can change these up by adding different flavours to the centre.
- Try lemon curd, caramel sauce or chocolate sauce.
- Make a lovely icing to add on top of your thumbprint cookies!
- Sprinkle your cookies with shredded coconut for something a little different and exciting.

How To Make Lemon Berry Thumbprint Cookies (Step by Step)
- Mix the room temperature butter with sugar, egg, vanilla, honey, sugar, lemon and lemon zest with a whisk.
- Then add the flour and baking soda.

3. I like to then cover with cling wrap and allow it to chill in the fridge for 30 minutes or up to 24 hours.
4. Preheat the oven to 180c/ 355f.
5. Take it out of the fridge and scoop about a tbsp out at a time and form into a uniform ball. Place them on your prepared baking tray.

6. Place your thumb carefully in the centre and make a nice round indentation. You can press a tsp into them as well.

7. Add your favourite jam to the whole and then bake for about 12 minutes in the oven.

8. Take them out of the oven and allow the cookies to cool and enjoy!

You can also store them in the fridge for a solid week!
Unbaked Cookies
You can roll out the dough, shape and flash freeze the individual cookies. Once they are frozen store them in freezer ziploc bags for up to 3 months.
When you want to bake them take them out of the freezer, place them on your baking tray and fill them with your favourite jam. Bake them in the preheated oven and let them bake for about an extra 2 minutes. Take them out, let them cool and enjoy!
