A simple summer salad recipe when you need a side dish! We rarely have salad greens in our home, and this recipe came about because I needed to whip up a side dish on a very hot day!

You will love this quick and easy summer salad recipe. It's bursting with flavour and only needs a few basic ingredients!

No one wants roasted veggies when it’s scorching outside! I went through my fridge and pantry and ended up making this really delicious mediterranean style summer salad recipe.

We have been making this recipe on repeat, and I know you will too! I always keep my kitchen stocked with pantry staples so whipping something up from scratch is never too difficult to do!

Salad Tips!

  1. I use canned beetroot as it’s already peeled and cooked. Simple and quick to dice up!
  2. Don’t add the liquid components until you are ready to serve so your salad doesn’t go soggy.

Ingredients Needed

Diced onion, cucumber, beetroot and fetta cheese on a cutting board with shredded carrot.
  • 1 large cucumber: I peel and dice my cucumbers.
  • 1 large carrot: Peel and shred your carrot!
  • 1/4 cup red onion: Dice it into small pieces for maximum flavour.
  • 1/4 cup of diced beetroot: I always have canned beetroot on hand. It’s already cooked and soft so all I have to do is dice it up.
  • 1/4 cup fetta cheese: Dice it into small pieces. I use smooth fetta cheese but you can use whatever type you prefer.
  • 1 tsp Italian seasoning: Adds great flavour.
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil: I use a cold press extra virgin olive oil for maximum flavour and health benefits.
  • 1/4 tsp salt: use a good quality salt like sea salt or Himalayan salt.

How To Make Salad

  1. Peel and dice your cucumber and red onion.
  2. Peel and shred your carrot.
  3. Dice beetroot and fetta cheese
  4. Add all ingredients into a bowl and give it a quick stir.
  5. Serve cold and enjoy!

Summer Salad Variations

  1. Add some diced red capsicum! It tastes really nice if you have some.
  2. Want it a little creamier. Add a few slices of avocado! I’ve done this and it’s really nice.
  3. Chop some nuts like pine nuts, walnuts or pecans for extra crunch!
  4. Feel free to add some sprouts for a little crunch and extra health benefits.

How to Store Your Salad

Any leftover place into a clean container with a lid and store in the fridge for up to 3 days. As it sits more liquid will accumulate at the bottom so best to eat it sooner than later!
