Easy Cheesy Creamy Potato Bake

My family adores this easy creamy potato bake. It’s everything you’d want in a side dish.

Cheesy, creamy, soft and flavourful potatoes that warm your insides. This recipe can is faster than most other recipes I’ve seen online and quite a bit different.

  3. Does not require chicken or beef stock which makes it healthier. Even though you could add a little in if desired.
  4. It’s gluten free. Lots of recipes want you to add flour to thicken it but this recipe does not require any flour.

Creamy Potato Bake Tips

  1. Cut your potatoes thin. Thinner potatoes cook quicker. I cut mine with a knife but for consistent thin slices you can use a mandolin as well.
  2. It’s better to add less liquid than more. Too much liquid leads to a sloppy potatoe bake. Potatoes will release liquid when cooking and you can always add a bit more cream if needed.
  3. I like to cover my potato bake for the first 30 to 40 minutes with aluminium foil. That way the liquid doesn’t evaporate too quickly and the potatoes cook beautifully.
  4. Don’t be afraid to add spices. Potatoes are pretty bland on their own. Don’t be afraid of salt, pepper, garlic and onion powder. They add so much flavour!
  5. Let the potato bake cool after you take it out of the oven for about 10 minutes. This will allow the rest of the liquid to thicken. It really makes a difference!

What You Need

8 medium potatoes: I use baking potatoes and thinly slice them.

500 grams of bacon: I’ve been into beef bacon, but turkey bacon or normal bacon all work great. Add make sure to add the fat that comes off the bacon when it’s cooking. That flavour can’t be missed!

1 tsp garlic powder

1/2 tbsp onion flakes

1/2 tsp sea salt

1/4 tsp black pepper

1 1/2 cup heavy cream

1 1/2 cup shredded cheese

How To Make The Best Potato Bake

  1. Preheat oven to 190c
  2. Dice and cook the bacon in a medium sized pan until crispy.
  3. While bacon is cooking peel and slice your potatoes.
  4. In a bowl add thickened cream, spices, bacon and bacon grease into it and mix.

5. Layer half the potatoes in a baking dish. Add half the amount of cream mixture and half the cheese on top.

6. Add the remaining potatoes on top, with the remaining cream and cheese on top.

7. Cover with aluminium foil and bake for about 35 minutes.

8. Uncover the potato bake and cook for another 15 minutes until the cheese has browned and looks crispy.

9. Take it out of the oven and allow it to cool for a further 10 minutes before serving.

How To Store Potato Bake

You can store your cooled potato bake in an airtight container in the fridge for 3 to 5 days.

When you want to eat reheat in a baking dish. Cover with aluminium foil and bake at 180c for about 10 minutes. Take it out and enjoy.

What To Eat With Potato Bake

Potato Bake is an amazing side dish but I wouldn’t consider it a complete meal. My kids would though.

You can serve potato bake with a filling salad.

Baked or fried meats like chicken, steak, lamb or pork.

Pair it with sausages or meat skewers.
