This healthy homemade marshmallow recipe is not only delicious, but easy to make as well. They are filled with protein, good fats, a little bit of natural sweetener and a touch of vanilla. You will love these soft, fluffy delicious marshmallows that melt in your mouth. They are delicious on their own or in your favourite warm drink. They melt beautifully in any hot beverage leaving a creamy sweet top layer.

Store bought marshmallows are not at all healthy filled with artificial sweeteners, numbers, colours and all kinds of nasty things. The grass-fed gelatine, egg whites and natural sweetener used in this recipe makes these marshmallows a guilt free treat!

Why Use Egg Whites

There are several reasons why you should use egg whites to make marshmallows. If you have a lot of egg whites this is a great way to use them up without wasting them. Egg whites are also very healthy and full of nutrients. Egg whites when beaten get nice and fluffy and make a really nice healthy marshmallow recipe.

If you are uncomfortable with eating raw egg whites don’t do it. You can look into it further if you like but don’t feel you have to use egg whites to make marshmallows. We raise our own chickens and I feel perfectly fine with consuming the egg whites raw. Many people eat raw eggs for muscle growth and for other health benefits. But like I said if you feel uncomfortable do a bit of research first or try and source some local free-range eggs. They also sell pasteurised egg whites at the shop if you are more comfortable with that.

Egg White Marshmallow Recipe

Ingredients

  1. 6-8 egg whites
  2. pinch of sea salt
  3. 1/3 cup filtered warm water
  4. 1 scoop grass fed gelatine is ideal but any gelatine will work
  5. 1/2 cup sweetener of your choice. You can use honey, maple syrup or sugar. I personally love rapadura sugar or maple syrup.
  6. 1 tsp vanilla

Tools

  1. You will need small pot
  2. Either a stand mixer or hand mixer
  3. Small bowl
  4. A small square or rectangle pan
  5. A spatula

How To Make Healthy Homemade Marshmallows

This recipe is pretty simple and doesn’t take very long to make so let’s get started!

  1. Pour your warm water in a small pot and add the gelatine. Give it a little stir and leave it to bloom.

2. Add a pinch of salt to your egg whites and whisk for a couple minutes so it gets frothy. Then stop.

3. Turn the pan on medium low heat and add the sugar and vanilla into your pan. Mix until the sugar dissolves and the liquid is warm not boiling!

4. Pour the sugar gelatine solution into your slightly beaten egg whites slowly while egg whites are being beaten.

5. After about 5 minutes the mixture will thicken significantly and be ready to be poured into your pan.

6. Flatten mixture with a spatula and place in the fridge for about 1 hour overnight is even better before cutting.

7. Slice to desired size and enjoy! Place leftovers in an airtight container in the fridge and eat within the week.

Marshmallow Tips

  1. Adding salt to the egg whites help them become fluffy. I have used cold egg whites with no salt and they would not fluff for anything. A pinch of salt really helps!
  2. Using closer to room temperature egg whites really helps them fluff up as well. Sometimes really cold egg whites don’t want to foam.
  3. Keep blending for a while it will definitely start to thicken. Once the mixture can hold it’s form you know it’s ready to be poured into your pan.
  4. Let your marshmallows set over night for absolute best results.
  5. Play around with different flavour combinations. I really want to try and add cacao powder and maybe even a chai spice one. I have even seen strawberry marshmallows before. So have fun with different combinations!

Questions And Answers

Is Egg White Safe Raw?

It isn’t recommended to eat raw egg whites because of food borne pathogens. I personally eat mine raw in certain instances because I raise my own chickens, know they are healthy, and I keep my eggs clean. Try and source free range chickens if you don’t have your own or you can buy pasteurised egg whites at the store if that feels better to you!

Can You Taste The Maple Syrup?

You cannot taste a strong maple syrup taste in this recipe. You, just a nice light sweetness which adds lovely flavour into your coffee or teas. You can use whatever sweetener you desire honey works great and so does normal sugar. Make sure you dissolve the sugar with the gelatine first, so you don’t get any gritty pieces in your marshmallow.

How Do You Store Marshmallows?

For this healthy marshmallow recipe, you can store them in an airtight container in the fridge for up to a week. I would not keep them out at room temperature due to the egg whites. The fridge keeps them fresher, and they stay firmer that way as well. If you leave the marshmallows out too long, they will start to melt and get pretty sticky.

Can You Use Any Gelatine For This Recipe

While any gelatine will work for this recipe, I use a bovine grass-fed gelatine for all the health benefits. Not all gelatines are made equally. You can definitely buy some pretty cheap nasty smelling gelatines. I actually find this gelatine doesn’t have that intoxicating strong smell like the cheap store-bought ones do when you heat them with water.
