Homemade Sourdough Pop Tart Recipe
Making your own homemade sourdough pop tart is really very easy! And they taste so good.
Making these reminded me of my childhood and all the fun flavours you can get pop tarts in. Trouble is the storebought pop tarts are incredibly unhealthy!
So, I wanted to try and make a healthier version. While they are definitely healthier than the store-bought ones remember there is still a bit of sugar in them!
These pop tarts are a great treat for breakfast, birthday surprise or lovely little snack your family will truly love.
Delicious, buttery, flaky crust filled with jam, cream cheese, custard or a chocolate sauce and topped with a bit more sugar really does make these a delicious treat.
Why Make Your Own Homemade Pop Tarts?
There are many reasons why you should make your own homemade pop tarts!
- They are a lot healthier than store bought pop tarts which are filled with numbers and extra ingredients you just don’t need.
- You can change up the flavours to whatever you like. Maybe you can’t buy a flavour combination you would enjoy, so make it!
- They are actually pretty cheap to make. When not on sale store bought pop tarts here in Australia are $7 for 4 pop tarts. I can easily make triple that amount for that price.
- Homemade pop tarts in my opinion taste better! The pure ingredients just taste better!
- You can control how sweet they are, add less or more sugar. Use different types of sweeteners you get to decide!
Flavour Variations
Have fun with different flavours! Here are some ideas.
- Add any flavoured jam or marmalade as the filling.
- Make a cream cheese filling to go inside these pop tarts, it taste amazing!
- Place lemon or passionfruit curd inside these pop tarts.
- Make a butter, sugar, cinnamon filling.
- Why not add some homemade chocolate syrup inside!
There are so many ways to change up the flavours and have fun!
Tips For Making Sourdough Pop Tarts
- I let my butter go to room temperature and then mix all the ingredients together. It comes out beautifully. Do not melt your butter in a pot though it changes the consistency and isn’t the same.
- You don’t want to have a thick pop tart dough. Make sure to make it pretty thin when rolling it out. Remember you will be folding the dough on top of itself.
- Preheat the oven before placing these pop tarts in the oven so they cook properly.
- Make sure to allow your pop tarts to cool for about 10 minutes before placing the glaze on top or it will just soak into your warm pop tart.

Ingredients
Sourdough Discard: You don’t need active started for this recipe discard will work fine as we don’t need the pop tarts to rise.
Flour: You will need flour to make pop tarts. I like to use Khorasan also known as Kamut. But white flour, or white spelt flour will work great to. I don’t like using wholemeal when baking as it’s a denser flour.
Butter: Can make a pastry dough without butter. You can use salted or unsalted it doesn’t matter! Don’t use margarine just good old per butter.
Sugar: You will need some sort of sugar or sweetener to sweeten up your dough. You can use honey or maple syrup as well but you may need to increase the flour slightly to compensate for the extra liquid.
Salt: Sea salt or Himalayan salt is a flavour enhancer I always add a little to my dishes.
Vanilla: Adds a lovely extra taste to these homemade pop tarts.
Jam: You will need jam for the filling or see flavour variations for different filling ideas.
Egg: One egg is needed for this recipe to help seal the pop tarts together and for a nice shine on top.
Powdered Sugar: You will need powdered sugar if you want to make a glaze to go on top of your homemade sourdough pop tart.
Water: Just a little water to water down the powdered sugar to place on top of the pop tarts when they are finished. You can also use a little milk instead of water.
Supplies
Bowl: You will need a large bowl to place your sourdough pop tart dough into so it can ferment.
Dough Whisk or fork: A dough whisk is an amazing tool at mixing batter and dough together, but a fork and your hands will work as well!
Silicone mat or baking paper: I love using my silicone matts for baking. They are reusable and non stick but baking paper works great if that’s all you have too!
How To Make Sourdough Pop Tarts (Step by Step)
- Allow your butter to go to room temperature this makes the mixing process a lot easier.
2. Add the sugar, salt, sourdough discard, and vanilla to the soft butter and mix with a fork or dough whisk.
3. Add the flour one cup at a time and continue to mix with dough whisk or fork. You will need to finish it off with your hands.
4. Form two separate balls and wrap them in clingwrap and place in the fridge. They can stay in the fridge for up to 5 days! See notes for more details. After at least half an hour you can take them out.
5. Preheat your oven to 190c/375F.
6. Roll out your dough into a rectangle shape and slice into 4 even portions.
7. Whisk your egg in a separate bowl and with a brush, brush it onto one side of the pop tart pastry.
8. Place 1 tbsp of jam near the bottom of your rectangle and fold the top part of the pastry over the bottom so it’s in half.
9. Crimp the edges with a fork and then place on a baking tray lined with a silicone baking mat or baking paper and place in the oven to cook for 20-23 minutes.
10. Take out of the oven and allow to cool for 5 to 10 minutes before placing the glaze on top.
To Make The Glaze
- Mix the powdered sugar and water together and place the glaze on top of cooled pop tarts. Enjoy!
Make Ahead
You can make this homemade pop tart recipe ahead of time. Just prepare the dough like normal, wrap it up and you can place it in your fridge for up to 5 days until you are ready to take it out and continue with the recipe.
Or you can make them with the jam filling and freeze them individually for a few hours. Place them in ziploc bag once frozen and store for up to 3 months until you are ready to bake them!
