While realistically you can use whatever apples you have on hand some apples are better at holding their shape than others.

Granny smith apples, Fuji apples, Pink Lady and Honey crisp apples are some of the apples that hold their shape well when baking.

Ingredients Needed for Apple Crumble Muffins

2 cups flour: I use Spelt flour but you can use a different flour.

1/2 cup sugar: I love rapadura sugar as it’s healthier but has a similar taste to brown sugar. You can use brown sugar or cane sugar if that’s what you have on hand.

1/2 cup maple syrup

1/2 cup melted butter: Room temperature butter does work better though giving a nicer consistency.

1/3 cup milk

2 apples peeled and chopped

1/2 tsp all spice

1/2 tsp baking soda

1 tsp baking powder

pinch of salt

Large bowl for mixing

Muffin trays: I personally love using silicone trays as the muffins pop out really easily this way.

How To Make Apple Crumble Muffins

  1. Preheat oven to 180c/ 355F
  2. Peel and chop up two apples.

3. Place all muffin ingredients except baking soda, baking powder into a large bowl and mix well.

4. Add baking soda and baking powder into your muffin batter.

5. Pour muffin batter into prepared muffin trays.

6. To make the streusel add all streusel ingredients into a bowl and mix with your hands. Should be crumbly.

7. Add about 2 tbsp of streusel mixture of top of each muffin and press down slightly so it stays.

8. Bake in the oven for about 20 minutes.

9. Remove from oven and allow it to cool for another 20 minutes and enjoy!

You can also store cooled muffins in an airtight container in the fridge for up to a week. They do taste better warm, so I'd heat them up either in the oven or microwave if you choose.

These muffins can be cooled and stored in an airtight container in the freezer for up to 3 months. Just take them out and let them either defrost in the fridge or on the counter until defrosted.
