1 kg chicken thighs or breast chopped. About 2 lbs worth.
1 cup brown rice. I like brown basmati rice.
2 cups chicken bone broth
2 cups chopped broccoli
1 onion chopped can be white or red
A can of corn
1 cup cream
2 cup shredded cheese
1 tbsp of mustard
spices: 1 tsp each of sea salt, garlic powder and Italian seasoning.
1 tbsp coriander dried or 1/4 fresh coriander. Fresh really adds a lovely punch of flavour!
Black pepper to taste

Slow cooker: This is a great large slow cooker that allows you to cook on high, low and has a warm setting.
Sharp Knives: A beautiful affordable set of sharp knives that are also good quality.
Measuring cups and spoons: Stainless steel measuring cups and spoons. Sturdy, hard to break and very affordable.
How To Make Slow Cooker Creamy Chicken and Rice

- Dice your chicken into about 1in cubes and place in slow cooker on high.
- Dice the onion and place into slow cooker.
- Add, brown rice, spices, coriander, can of corn, mustard, bone broth and cream into slow cooker.
- Let it cook for 3 hours
- Then add chopped broccoli into slow cooker.
- After another 1.5-2 hours (once rice is cooked) add the shredded cheese into slow cooker and mix until well incorporated.
- It’s now ready to serve!
How To Store
Allow your chicken and rice dish to completely cool and store in an airtight container in the fridge for up to 3-5 days. You can reheat in a pot on low until it reaches the temperature you like.
You can also freeze cooled chicken and rice. Allow it to cool completely store in an airtight container. If storing in glass make sure to leave an inch space to allow for expansion. When you want to eat it simple take it out and let it defrost a bit before reheating in a pot until it reaches the temperature you like!
