Tips For Making The Best Sourdough Cookies
- Use good ingredients: We all know if you want something to taste superb use good quality ingredients. Buy good flour, delicious chocolate chips and good quality butter makes all the difference!
- Add extra fat: For a delicious melt in your mouth soft cookie, you don’t want to skimp out on the fat. Butter and good oils are a must for soft cookies.
- Refrigerate or freeze cookies before baking: Refrigerating the dough will solidify the fat so your cookie holds it shape better when baking. It also allows the flour to hydrate and the flavours to develop!
- Slightly underbake your cookies: It is better to slightly underbake your cookies as they will continue to cook while resting. This will make sure you still have a nice soft centre.
- Let them rest: Allow your cookies to rest so they can finish baking in the middle. They will firm up more after cooling down.
Ingredients Needed
There are a few ingredients you will need to make these delicious sourdough chocolate chip cookies!
- Flour: I use Khorasan flour, which is similar in texture to white flour, but healthier. I wouldn’t use wholemeal flours as they are denser.
- Sourdough starter: You can use sourdough discard for these cookies as we will be using a leavening agent.
- Sugar: You can use brown sugar or white sugar. I love the taste of rapadura sugar which is similar to brown sugar, but white sugar does lend to a softer cookie.
- Butter: Delicious real butter gives these cookies an irresistible taste and makes them soft and amazing.
- Eggs: You will need a couple eggs to bind the ingredients together.
- Vanilla: Adds an extra taste which is delicious.
- Sea salt: Salt enhances the flavour.
- Baking soda: Helps your cookies to rise a little so they aren’t flat like crepes.
- Baking powder: Helps cookies rise and keeps them light and fluffy.
- Chocolate chips: Personally, I love dark chocolate chips, but you can use whatever colour you like or even use button chocolates!
How To Make Sourdough Chocolate Chip Cookies
- First either melt the butter in a saucepan or allow it to go to room temperature on the counter.
- Mix the melted butter, sugar, salt, eggs and vanilla together.
- Add the sourdough starter and mix with your dough whisk.
- Add the flour a cup at a time until well incorporated.
- Then add your baking soda and baking powder into your cookie dough and mix.
- Add the chocolate chips at the end and incorporate well.
7. Scoop out about 1/4 cup of dough at a time and form into balls placing them on a lined baking tray.
8. Let the dough chill in the fridge anywhere from 2 hours up to 48 hours. The longer they chill the better they will be!
9. Preheat oven to 190c, once it reaches temperature place cookies in the oven and bake for about 10-12 minutes.
10. Take them out of the oven and allow them to cool for several minutes before placing them on a cooling rack.
11. Once cooled enjoy!
How To Store And Freeze Cookies
Baked Cookies
Store completely cooled baked cookies in an airtight container on the counter for up to 5 days.
You can also refrigerate them for about 2 weeks in an airtight container.
Or freeze cookies once they have completely cooled and place into an airtight container or ziploc freezer bag. they can last for almost a year this way. Make sure to separate cookies with parchment paper so they don’t stick together. Just take them out and allow cookies to cool at room temperature and enjoy!
Unbaked Cookies
You can freeze the pre shaped cookie dough on a single layer on a baking tray. Once they have completely frozen place your cookie dough balls into a ziploc freezer bag or an airtight container.
When you are ready to bake just preheat your oven, place cookies on a baking tray and bake like normal. You can store frozen unbaked cookies for about 2 months.
