Ice cream has been around before there were even fridges! Isn’t that crazy! While reading little house in the prairie series. Book number 3 Farmer Boy the children make ice cream in a bathtub!
They have a huge ice room filled with ice, which they used to fill a bathtub with ice. Then they placed salt over the ice, as this lowers the freezing point of the water.
They then added cream and sugar into a large bowl that fit in the tub and would take turns stirring until it was thickened and turned into ice cream.
Over the years the concept has stayed the same churning cream and sugar in a cold environment until it turned into ice cream. Now there are ice cream makers, but you do not need to have one of these to make your own at home.
We are doing the same kind of thing. Using a large bowl with salted ice and fitting another bowl inside. Instead of having to hand whip using an electric whisker speeds up the process big time and will leave you with a creamy, delicious gourmet style ice cream.

- Start off with cold ingredients including your eggs!
- Don’t skip the salted ice step. This is crucial to getting a softer end result! I tried it many times with and without and it definitely makes a difference.
- Add any additional add ins after the 2nd whipping of your cream.
- Use whole milk does not skim or reduced. To get the best ice cream you want a lot of fat, so the ice cream comes out creamy not icy.

For this recipe there are a few things you will need!
Ingredients
- Cream: This forms the bulk of the ice cream making it creamy and delicious!
- Milk: Use whole milk to get the best ice cream consistency.
- Egg yolks: I add several egg yolks. It gives the ice cream a rich taste, does not taste eggy at all and adds in a lot of protein. With the extra whites you can turn them in healthy Marshmallows!
- Sweetener: If you want sweet ice cream you will need to add in sugar, honey, maple syrup or some type of sweetener of your choice!
- Vanilla: Delicious but not absolutely necessary depending on the flavour you are going for.
- Ice and Salt: To help freeze the ice cream. This acts like an ice cream maker keeping your ice cream cold while blending.

- Two bowls one larger and one that fits in the larger bowl.
- Electric blender: For whisking up all the ingredients.
- Container: For storing your ice cream in. Make sure it has a lid as well.

Step By Step Homemade Ice Cream Instructions
- Grab your large bowl and place about a dozen ice cubes into it and several tbsp of a cheap salt. This makes the ice go extra cold!
- Place the smaller bowl inside the larger bowl
- Add the cream, milk, egg yolks, sugar, and vanilla into your small bowl.
- Blend using an electric blender until the mixture has thickened to almost a whipped cream consistency. This can take a solid 10 minutes with an electric blender.
- Cover the small bowl with cling wrap and place both bowls together into the freezer.
- Leave it in the freezer for about 3 hours.
- Take your ice cream out of the freezer and you are going to whisk it with the electric blender one more time for about 4 minutes, to break up any ice crystals.
- You can now add ad ins like shaved chocolate or swirl caramel or chocolate sauce into your ice cream mix.
- Grab your chosen ice cream container and pour your ice cream straight in, close the lid and place it in the freezer preferably over night for the perfect ice cream.

How to add flavours to your no churn ice cream?
If you are wanting to make different flavour combinations this is how! Here are 2 different ways to add flavours.
- After the 2nd whisking of your ice cream, you can layer your flavours in. Grab your chosen container/s, pour some of your ice cream mix in, then add a layer of your sauce, jam or fruit. Repeat the layers until you are happy and have filled your container. Place back into the freezer and let it set preferably overnight.
- The second way is before you do the 2nd whisking, add in your flavour example cacao powder (add extra sugar if using cacao as it’s bitter) and whisk it well to make chocolate ice cream.
- If you want your ice cream to be all the same flavour you will want to add it before the 2nd whisking so that it blends together. If you want chunks of chocolate or layers of sauce/jam you will do that after the 2nd whisking.
