Healthy No Bake Kefir Chocolate Cheesecake

This no bake kefir chocolate cheesecake is so very delicious! It is a hit with everyone who has tried it so far and I’m sure it will be with a hit at your house too.

Sometimes I want to eat something considered naughty without it actually being bad for you. This cheesecake is made with pure ingredients and is loaded with good fats, probiotics due to the kefir, antioxidants and minerals.

It’s light and fluffy, every mouthful melting in the mouth. Now I will say this there are a few extra dishes with this cheesecake, while it is simple to make it does have several different components to it.

I make this cheesecake as a special treat. This would be great for a family gathering or any special event!

What Is Kefir Cheese?

Kefir cheese is milk kefir strained through a cheesecloth leaving all the solid milk while the liquid drains into a bowl or measuring jug. I use the liquid to make a chocolate drink for the kids, but it can also be added into soups as the liquid portion.

Milk kefir is milk fermented using kefir grains which naturally thicken the milk and make it extra healthy. I wrote this post on How To Make Milk Kefir and talked about its benefits if you would like to learn more. Milk kefir is a probiotic rich food which is great for your overall health.

Ingredients You Need

  1. Kefir Cheese or cream cheese will do. But Kefir cheese will give you the probiotics and extra health benefits making this a healthier cheesecake.
  2. Rapadura Sugar: You can use any sweetener, but I love the taste of rapadura sugar which is dehydrated molasses. It taste similar to brown sugar but healthier for you.
  3. Sea salt: Salt helps to enhance the flavour of food and adds extra minerals
  4. Vanilla: Just a little vanilla essence is all you need but it’s optional if you don’t have.
  5. Dark Chocolate: You will need 2 bars of dark chocolate. I love 50 percent for the middle 85% dark for the ganache but you can use different percentages.
  6. Cream: You will need pure cream for whipping and for the chocolate ganache on top.
  7. Grass Fed Gelatin: Because this is a no bake cheesecake you will need something to help it thicken and set. I buy a good quality gelatin.
  8. Cheesecake Crust: You will need a base for the cheesecake.

How To Make Kefir Chocolate Cheesecake

Whisk the cream cheese, sugar, vanilla and salt together until creamy.

Melting chocolate for cheesecake.

Melt the dark chocolate in a double boiler. I place the chocolate in a glass measuring cup and place the measuring cup in a pot with boiling water. Or you can melt it in the oven.

Mixing dark chocolate into kefir cheesecake mix.

Mix the dark chocolate into the cream cheese mix.

Whip the cream until it is nice and thick.

Boil water and mix the gelatin in. Pour the gelatin into the cheesecake mix and whisk it together.

Fold the whipped cream into the cheesecake mix.

Pour the Cheesecake mix into your prepared cake pan and place in the fridge to set.

While it’s setting you can melt the dark chocolate with cream in a double boiler. Pour the ganache on top of the cheesecake and refrigerate over night.

How To Store Kefir Chocolate Cheesecake

Store the cheesecake in an airtight container in the refrigerator. This cheesecake can also be freezed and thawed out for later perfectly!

Slice it into the pieces you want first and place into an airtight container. Then place it in the freezer. When you want some cheesecake just remove from the freezer and place into the fridge to defrost.

It will last about a week in the fridge or several months easily in the freezer.

Ingredients

  • 180 grams dark chocolate melted
  • 2 cups kefir cheese or cream cheese room temperature
  • 1/2 cup rapadura sugar
  • 1 tsp vanilla
  • pinch of salt
  • 300ml cream whipped
  • 1/2 scoop gelatin
  • 1/4 cup boiling water
  • CHOCOLATE GANACHE INGREDIENTS
  • 80g dark chocolate
  • 1/3 cup cream

Instructions

    1. With Your Electric Hand Mixer blend the cream cheese, sugar, vanilla and salt together until creamy. You can use a normal whisk as well it's just a bit more work.
    2. Melt the dark chocolate either in a double boiler. I place the chocolate in a glass measuring cup and place the measuring cup in a pot with boiling water. Or you can melt it in the oven.
    3. Mix the dark chocolate into the cream cheese mix.
    4. Whip the cream until it is nice and thick.
    5. Boil water and mix the gelatin in. Pour the gelatin into the cheesecake mix and whisk it together.
    6. Fold the whipped cream into the cheesecake mix.
    7. Pour the Cheesecake mix into your 9in prepared SPRINGFORMED CAKED PAN and place in the fridge to set.
    8. While it's setting you can melt the dark chocolate with cream in a double boiler. Pour the ganache on top of the cheesecake and refrigerate overnight.
    9. Slice and enjoy!
    10. Store in an airtight container in the fridge or you can freeze it for later. Make sure to slice it first!
