How To Make A Scoby Fruit Leather

Making a scoby fruit leather is so easy! If you enjoy brewing your own kombucha drinks, then you know how you quickly end up with lots of baby Scobie’s from the mother!

I used to give them away or compost them until I went to a fermentation market and learned you can do so much more with Scobie’s!

One of those things was making scoby fruit leathers, which we all thoroughly enjoy!

Why Would You Eat A Scoby?

I’m glad you ask!? I mean scobies look pretty weird and they are not a texture I naturally want to chomp my teeth into. But they are very healthy and full of bacteria and yeast, which can help to improve your gut health.

Gut health is super important, and I am big on taking care of it! Kombucha scobies are also full of protein, fibre and antioxidant which makes it filling and nourishing.

They also happen to make an incredible scoby fruit leather!

Ingredients

What you need for this recipe is 2 medium size kombucha scobies, 4 tbsp of water or kombucha tea, 1/2 cup fruit, 1 tbsp of honey or maple syrup is optional but taste delicious.

I used in this recipe strawberries and a tsp of vanilla which is optional. I have made apple cinnamon ones, blueberry vanilla ones and mulberry ones which all came out amazing so you can definitely play around with flavours.

This Recipe will make 1 10in by 10 inch sheet of scoby fruit leather. I normally like to do double or triple batches at a time! I line my dehydrator tray with parchment paper first!

All you need is a good blender, add all the ingredients into the blender and blend until thick and smooth.

You might need to add a bit more water to get it to blend. I like it just mixed and should be easy to scoop up with a spoon.

After it’s blended smooth the mixture onto the parchment paper that’s on your dehydrator tray. Use a spatula and spread the mixture as evenly as possible until is it about 1/4 inch thick.

Place the tray into your dehydrator at 45c which is 110F and let it dehydrate for about 14 hours.

Make sure you check them after about 12 hours as they might need a bit more or less time depending on thickness and how much water was added. If the middle is still wet let it dehydrate longer!

Once your scoby fruit leather is all done it should peel easily off your parchment paper or silicon mat and is ready for cutting.

You can either rip it in pieces with your hands if you want a more rustic look or cut it with scissors in nice, neat lines and roll it up!

These honestly don’t last long the kids just gobble them up! To store I put them in a jar with a lid on it and store away from direct sunlight.

That’s it! Super easy delicious snack which uses up your extra kombucha scobies!

I really like this blender mine lasted years! Nutri Ninja. Any strong blender will work well though for this recipe!

Other dehydrating Options

You can place this mixture onto parchment paper or a silicone mat and leave it in a sunny spot on the bench. It works well in summer but can take up to 2 days to dehydrate properly!

You can also use an oven! Place the mixture onto a silicone mat and place in the oven at 45C/110F.

Let it dehydrate in the oven for about 8 hours. It may need more time so make sure to check on it!

Questions And Answers

Are homemade fruit leathers healthy?

Homemade fruit leathers are way healthier than storebought ones because you have control over the ingredients used.

You can puree fruit and dehydrate as is at a low temperature to create fruit leathers. These have no extra sugar and are just pure fruit.

Or you can add natural sweeteners to yours like I do. Making Scoby fruit leathers give you the added probiotics as well!

How long does it take to dehydrate fruit leather?

This can vary depending on how much extra liquid is in your base and how thick you layer your fruit leather.

If it’s pretty thin and the texture of your fruit leather is on the thicker side, not as much liquid it can dehydrate faster. But typically, it can take anywhere from 8 to 12 hours to dry properly.

Why is my fruit leather cracking?

If your fruit leathers are cracking, it’s okay. They are still delicious and fine to eat. It just means they are a bit too dry and next time don’t dry them as long.

How To Make A Scoby Fruit Leather

Ingredients

  • 2 medium size scoby. About 1 cup worth when blended.
  • 4 tbsp of water or kombucha
  • 1/2 cup fruit of your choice fresh or frozen
  • 1 tbsp of honey or maple syrup (Optional)

Instructions

  1. Line your dehydrator tray with parchment paper. This recipe covers a 10in by 10in tray.
  2. If using an oven line a baking sheet with parchment paper or a silicone baking mat. Preheat oven to 45C/110F.
  3. Pour all ingredients into a powerful blender and blend on high. Should be scoopable with no clumps.
  4. Pour the mixture onto your baking paper or silicone mat and spread as evenly as possible until it's about 1/4 thick.
  5. Place the tray into the dehydrator at 45C/110F and let it dry for about 14 hours. Check it at the 12 hour mark just in case. It might need more or less time depending on thickness and consistency.
  6. If using an oven place the sheet into the oven at 45C/110F for about 8 hours. Check it at the 6 hour mark it might need more or less time depending on thickness and consistency.
  7. Once it's dry cut the fruit leather with scissors or rip it with your hands for a more rustic look.
  8. Roll it up and store in a jar with a lid on it away from direct sunlight.
  9. That's it then enjoy!
