Crustless Chicken Quiche Recipe

I absolutely love quiches because they are so simple to make, and you can literally throw whatever you have in the fridge into it and make a meal. Crustless quiches are even easier because you don’t have to take the extra steps to either make a crust or make sure to have a store-bought crust on hand.

This crustless chicken quiche recipe is super versatile and makes a great healthy breakfast, lunch or dinner option.

What Is A Quiche?

A quiche is a bit different to frittatas because it contains milk and or cream in it making it more custardy. Quiches normally contain meat, cheese and or vegetables in them.

A quiche will normally have a crust as well, but you can easily make a delicious quiche without one. You can serve the quiches hot, warm or even cold.

Equipment

Casserole dish: This is a beautiful set of 4 with different colours to choose from. You will need a casserole dish that is approximately 12in by 9 inches for this recipe.

Frying pan or pot: For frying the onions and mushroom first.

Cutting Board: To cut your vegetables on.

Knives: You will need a sharp knife to cut your vegetables with.

Ingredients

Eggs: This recipe does require at least 6 eggs.

Chicken: I generally buy a roast chicken and shred the leftover chicken to put into a quiche. You can use chicken breast or thighs as well and just precook them and shred them.

Bacon: It’s not necessary but does add delicious flavour to the quiche!

Cheese: You can use whatever cheese you like but I highly recommend adding cheese. It gives it a beautiful flavour and also helps to hold the quiche together beautifully.

1 cup of any vegetables you like. I love adding mushrooms and onion to mine.

Spices: I personally use salt, pepper and garlic powder to flavour my quiche.

Cream and Milk: I like to do a mix of both cream and milk. It gives the quiche a lovely custardy flavour and sets beautifully.

How To Make A Quiche

  1. Preheat your oven to 375F/ 190C

2. Either boil some chicken breast and thighs in some water for about 20 minutes and shred. Or if you have a roast chicken shred 2 cups of chicken.

3. Slice onions and mushroom and sauté in a pan with butter. Add salt, pepper and garlic powder and mix well.

4. Once the mushroom and onions have turned slightly golden, turn of the heat and add the chicken to the mix.

5. Shred 1 cup of cheese.

6. Mix together the eggs, milk and cream.

7. Place the chicken and vegetable mixture into the casserole dish. Add the cheese on top and then pour the egg mixture on top.

8. Place into the oven and let it cook for about 35 minutes until the top has turned a lovely golden colour.

9. Carefully take it out of the oven and allow to cool for about 10 minutes. Slice and serve!

  • 1 tsp sea salt
  • 2 cups shredded chicken
  • 4 bacon rashers sliced
  • 1/2 onion
  • 1/2 cup mushrooms

  • 1 1/2 cups shredded cheese

Why is my quiche soggy?

Your quiche can be soggy for many reasons. If it didn’t cook long enough it can be soggy. After it comes out of the oven letting it set for 10 to 15 minutes can help as liquid is still evaporating.

If you use vegetables with a lot of water content like zucchini and tomatoes it can make your quiche soggy as well.

Can you use milk instead of cream in a quiche?

You can use milk instead of cream in a quiche. It might not be as custardy, but it will still set as long as you still add the cheese and the same number of eggs the recipe gives.
