Benefits of Chocolate Kefir Chia Pudding
I used to make this chocolate kefir chia pudding recipe all the time and then forgot about it for a while. Now that I have kids this is such a simple, quick, filling, nutritious breakfast or portable snack I can make on the run.
I love that I can plan this the night before or can even whip it up in the morning pretty quickly as long as I already have Kefir in the fridge, which I normally always do!
Chia seeds are loaded with fibre so it’s very filling and very important for a healthy gut! It’s also rich in antioxidants, minerals and fatty acids like omega 3s which has many health benefits. My favourite thing about making chia seed pudding is its so versatile and very filling.
You can use a range of different milks and flavour it however you like! This recipe though is one of my kids favourites and a sure win for any chocolate lover!
What You Need
Kefir
For this recipe we will be using milk kefir. Kefir is fermented milk using kefir grains and is generally thicker than normal milk.
It’s also loaded with probiotics which your body needs and is normally easier for the body to breakdown and process compared to unfermented milk.
My milk kefir can be scooped with a spoon. If your kefir is more on the liquid side, then you might need to add one extra tbsp of chia seeds to this recipe found at the bottom.
You can use any milk for this recipe, but I prefer to use milk kefir for all its health benefits. I wrote a post all about How To Make Milk Kefir And Its Benefits if you are interested in learning more about it!
Chia Seeds
You will need chia seeds it does not matter if they are grey or black they both work the same. I prefer to blend the chia seeds so they are like a powder for several reasons.
- You don’t have crunchy little seeds sticking to your teeth.
- It increases the surface area so you are using less amount of the whole product to get the same effect.
- They absorb the liquid way faster when blended so you don’t have to wait long before your chocolate chia pudding is ready to be eaten! Win Win right!
Chia seeds once blended can go rancid meaning they loose their health benefits over time so I like to blend it fresh before I will be using them. I do store excess blended chia seeds up to a week in a plastic bag in the fridge and haven’t had any issues with them! 🙂
Cacao Powder
Cacao powder is different to cocoa powder. You can substitute, if need be, but cacao powder is the raw unprocessed version. It has kept more of its antioxidant and nutritional properties compared to cocoa.
It is unsweetened and has a very rich chocolate taste, so you don’t need a lot. I buy Cacao powder in bulk, and it works out to be very affordable this way too!
Rapadura Sugar
Any sugar will do for this recipe, but I personally use and love Rapadura Sugar for just about all my sweetener needs. Rapadura sugar is unbleached and unrefined cane sugar.
It is very high in mineral contents and taste amazing! This recipe is easily adaptable, and you can add more or less sugar depending on your taste.

How To Make Kefir Chocolate Chia Pudding
Making Chocolate Chia Pudding is VERY easy!
Once you have gathered your ingredients place the kefir into a bowl.
Then add the sugar, cacao powder and Chia seeds into your kefir.
Afterwards just mix it well with a fork or whisk. I find a whisk to work best. Mix until it’s well incorporated. Let it set in the fridge for about half an hour and it should be beautiful and thick.
You can always add more chia seeds if you want it thicker. Or you can add more milk it if you would prefer it to be a bit thinner. I store excess in a container in the fridge.
We normally eat it within a day or two, but it has lasted up to a week in the fridge!

Can you use any milk to make chia pudding?
Yes, you can use any type of milk you desire to make chia pudding. You could even use water or coconut water since the chia seeds soak up the liquid giving it a pudding like consistency.
You might need to play around with the amount of chia seeds you like, as it can vary depending on if you use water or milk. Using milk does lead to a creamery chia pudding.
Are chia seeds good for you?
Chia seeds contain a lot of nutrients and are a good way to add in extra healthy fats, vitamins and fibre. They bulk up and can keep you nice and full which is why they are a great breakfast option.
Chocolate Kefir Chia Pudding
Chia pudding is rich in omega-3s and high in fibre. It is an excellent filling breakfast or snack option. Remember you can add whatever toppings you like! You and your family are sure to love this delicious chocolate chia pudding!
Ingredients
- 2 cup milk kefir
- 3 tbsp grounded chia seeds
- 3 tbsp rapadura sugar
- 1 tbsp cacao powder
- optional 1 tsp vanilla
- optional pinch of salt
Instructions
- Pour your milk kefir into a bowl.
- Add all the ingredients into the bowl and mix with a fork or whisk until fully incorporated.
- Cover and refrigerate for 30 minutes.
- Once mixtures has thickened you can remove from fridge. I like to stir it again and then add it into a bowl for serving. use whatever toppings you desire.
Notes
1. To make this pudding thicker add more chia seeds.
2. To make this chia pudding runnier you can simply add more milk to it.
3. This can keep 5 to 7 days in the fridge covered.
