You are going to love this slow cooker roast chicken recipe. Simple, delicious, full of flavour and very minimal hands on time.

This chicken can be shredded easily to serve as is or for salads and wraps. We love to grill our chicken in the oven for a few minutes to get that lovely crispy skin, but you definitely don’t have to.

Once you know the basics of slow cooking a whole chicken you can mix and match flavour as you please, but the seasonings I use are pretty delicious!

Slow Cooking Whole Chicken Tips

  1. Keep the chicken off the bottom of the slow cooker. As the chicken cooks it will release liquid. You don’t want your chicken sitting in this liquid as it will start to fall apart at the bottom and the skin will be soggy.
    • I suggest either placing some chunks of carrots and onion at the bottom. It adds flavour and keeps the chicken higher up. Or if you have a tray that fits into your slow cooker and won’t melt place that in!
  2. Place a tea towel or fabric slow cooker lid cover between the lid and your slow cooker. This catches that liquid that evaporates on to the glass and then drips down. If you don’t want soggy chicken and want to brown the skin, this is very important to do!

What You Need to Make This Slow Cooker Roast Chicken Recipe

Ingredients

  • A whole chicken: Mine was about 2 kg which is approximately 4.5 pounds.
  • 1 tsp sea salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp sweet paprika
  • 1 tbsp Italian Seasoning
  • 1 tbsp olive oil

Supplies

  • Slow cooker: I love my large one and highly recommend getting a larger one if you can. You will need one to slow cook your chicken!
  • Baking tray: To place your chicken in if you want to grill it in the oven.

How to Make Slow Cooker Roast Chicken (Step by Step)

  1. Place your spices in a bowl and add oil into it.
  2. Give the mixture a mix and rub all over your whole chicken. Even on the inside.
  3. If possible, place into a container and allow it to marinade for one hour or overnight!
  4. Slice white onion and carrot thickly and place at the bottom of your slow cooker.
  5. Put your whole chicken on top and set your slow cooker on high.
  6. Place a tea towel or slow cooker cover between the slow cooker and the lid so it catches the water.
  7. Cook on high for 4 hours.
  8. You can enjoy as is or take out the whole chicken and place it on a baking tray.
  9. Put the chicken in the oven on grill for about 5 minutes until it reaches the colour and crispiness you desire!

How to Store Your Roast Chicken

Once your chicken is cooled you can either place the whole thing in a large container with a lid and store it in the fridge for 3 days or you can shred the chicken.

If you shred the chicken, you can store it in an airtight container or ziploc freezer bags and store it in the fridge for up to 3 days or in the freezer for up to 3 months.
