Sourdough Discard Tortillas

Sourdough discard tortillas are so quick and easy to make! You can make these with just a few basic ingredients which you most likely already have at home.

Storebought tortillas or wraps have a lot of extra added ingredients which are not necessary and buying a pack of 8 wraps here in Australia is about $5. You can make so many wraps for $5.

I personally think homemade tortillas taste a lot better as well. Versatile and easy to make here is what you need to get started!

A flavourful, simple sourdough discard tortilla everyone will love. Only a few basic ingredients and you will have homemade tortillas.

Ingredients

3 cups flour: I used Spelt flour but for a lighter fluffier wrap you can use all-purpose flour. But really any flour will work for tortillas.

1/2 cup sourdough starter: You can use fed or unfed starter for these wraps.

2/3 cup water: Use filtered water.

1 tsp sea salt

1/4 cup olive oil: I personally like extra virgin olive oil, if you don’t like olive oil taste you can use a more mild tasting oil like rice bran oil.

Tips On Making Tortillas

  1. Get a few pans preheated to make more tortillas faster!
  2. You can swap out olive oil for a milder tasting oil if like rice bran oil if you don’t like the taste of olive oil.
  3. For a lighter and fluffier tortilla, you can use white flour or all-purpose flour. I like using white spelt flour, but this flour is denser.
  4. You can easily add spices into your tortillas mix to give it a unique flour!

How To Make Sourdough Discard Tortillas

  1. Mix together the flour, water, sourdough discard, salt and olive together until well incorporated.
  2. Incorporate into a ball, place in an oiled bowl and cover with cling wrap. Let the sourdough ball rest for about 8 hours on the counter away from direct sunlight.

3. Divide the dough into 12 equal portions.

4. Roll each dough ball out into about 1/4 inch thick on a lightly floured surface.

5. Have a pan preheated with oil or butter and place one tortilla at a time cooking for one minute on each side.

6. Remove from heat, allow to cool slightly before using or storing.

    You can also freeze extra tortillas. Let them completely cool first, layer the tortillas in a large freezer ziploc bag with paper towel or parchment paper between them. This will stop them from sticking to each other. They can be stored in the freezer for about 3 months.

    Tortillas can also be stored in the fridge in an airtight container or large ziploc bags for 7-10 days.

    You can also freeze extra tortillas. Let them completely cool first, layer the tortillas in a large freezer ziploc bag with paper towel or parchment paper between them. This will stop them from sticking to each other. They can be stored in the freezer for about 3 months.

    How To Reheat Tortillas

    You can either let your tortillas come to room temperature if you had them in the fridge or freezer. You can reheat tortillas in a preheated pan with a little butter or oil. Tortillas can also be heated in the microwave for about 30 seconds. Or preheat the oven to 180c/355F and place a stack of tortillas in the oven for about 5 minutes if they are cold. They will need longer if frozen.
