Healthy Homemade Lasagne Recipe

Honestly, who doesn’t love a good homemade lasagne recipe! It has everything you’d want in one meal! From delicious soft pasta sheets layered between a flavour meat sauce and cheesy white sauce, topped with more cheese baked until golden crispy.

Best thing about lasagne is it’s easy to make a larger amount for leftovers the next day or to freeze for another day. As long as you have the main components right, meat, cheesy sauce and pasta you can easily adapt flavours to your liking.

Adding different herbs, spices and types of cheese to make it extra amazing! I love making lasagne at home and I’m sure you are going to love this simple yet flavourful recipe.

Tips for Making Amazing Lasagne

  1. Cheese! Adding different types of cheese adds more flavour to your lasagna. I add parmesan and a stronger tasty cheese we have here in Australia. But mozzarella, 4 cheeses and cheddar cheese can also add a really nice flavour!
  2. Adding spices from the beginning: When cooking up the mince it’s important to start adding spices to the vegetables and meat as it’s cooking. They absorb the flavour instead of the flavour just sitting on top.
  3. Add less sauce: For a thicker lasagne that’s not completely sloppy make sure you don’t add a lot of extra liquid or sauce.
  4. Let it rest: Letting the lasagne rest at the ends allows some more of the liquid to evaporate as it cools and holds it shape better.

Ingredients Needed

This makes a large lasagne! Feel free to cut it in half!

1.5 kg mince: I use beef you can use lamb if you like as well.

Vegetables diced: 1 onion, 2 carrots, 6 mushrooms.

Spices: 1 tbsp sea salt, 1 tsp cracked pepper, 1 tbsp paprika, 1 tsp Italian seasoning.

2 cups pasta sauce

1/2 cup fresh coriander chopped. (Optional but great added flavour!)

2 cups shredded cheese of choice: I use mozzarella, or strong tasty cheese just depends on what I have on hand.

White Sauce Ingredients

1/3 cup melted butter

1/3 cup flour: I use tapioca flour but any flour will do.

3 cups milk

1/4 cup parmesan cheese

1 cup shredded cheese of choice.

How to Store and Freeze Homemade Lasagne

You can store this homemade lasagne several different ways!

Uncooked Lasagne

Once you assemble your lasagne in a baking tray or aluminium tray let it cool completely. Then cover your lasagne and place in the fridge for up to 3 days and then bake as per instructions.

You can also store your cooled lasagne in the freezer for up to 3 months. Take it out the night before or morning you want to cook so it can defrost a bit and then bake as per instructions in a preheated oven.

Cooked Lasagne

Allow your lasagne to completely cool then place in an airtight container in the fridge for up to 5 days. You can preheat oven and let it cook until warm generally about 10 minutes.

Allow your lasagne to completely cool and make sure to cover well in an airtight container or covered with cling wrap. You can place it in the freezer for up to 3 months. Take it out the night before and place in the fridge or the morning of the day you want to eat it so it can defrost a bit. Then place in a preheated oven at 180c for about 10 minutes until nice and warm.

Can you Cook Lasagne From Frozen?

You can definitely cook your lasagne from frozen if you forget to take it out. But remember that it can take twice as long for it cook all the way through.

Step By Step Homemade Lasagne Instructions

This is a large lasagne recipe. Feel free to cut this recipe in half!

  1. Cook the diced onion, carrot and mushroom in a large pot with some butter or oil. Add a little pinch of salt and pepper to flavour the vegetables and the coriander last.
  2. Once vegetables are soft add the mince (ground beef), spices and pasta sauce to the pot. Stir well so the spices are well incorporated.

3. Once meat is cooked let it rest while you make the white sauce.

4. In a smaller pot melt butter and sieve flour into the melted butter and mix quickly.

5. Add 3 cups of milk and then your cheeses.

6. Once it’s all melted together take it off the heat. Time to assemble your lasagne.

7. Preheat oven to 180c

8. In a large baking tray add meat, pasta sheet, meat, white sauce, shredded cheese, pasta sheet, meat, white sauce, shredded cheese. You can do several layers of this if you like!

9. Place your lasagne in the preheated oven and allow to cook for about 25 minutes until the cheese on top is golden and crispy.

10. Take it out of the oven and allow to cool for about 10 to 15 minutes before serving! Enjoy!
