It doesn’t take very long to throw together either and minimal dishes are used. Let’s be honest no one wants to cook dinner and have a load of dishes to wash afterwards.

Chicken Broccoli and Cheese Tips

Here are a few tips to make sure you make the best meal!

  1. For really juicy tender chicken use chicken thighs! Make sure to cook them slightly to pan fry them slightly so the juices stay inside.
  2. Use brown rice when making this dish so the rice doesn’t over cook.
  3. You can swap out the broccoli for cauliflower or other vegetables that you like!
  4. Serve with some Sourdough Artisan bread on the side to really bulk up the dish!

What you Need to Make This Recipe

Supplies

Sharp Knife: For cutting vegetables and chicken.

Large pot: To cook all the food in.

Ingredients

1 white or red onion diced

2 large carrots peeled and diced

2 cups brown rice: I use Brown Basmati rice, taste so good.

2lbs of chicken thighs which you will dice

3 cups broccoli florets

4 cups bone broth. Here’s a recipe for a flavourful homemade bone broth!

Seasonings: 1 tsp garlic powder, 1 tsp sea salt, 1/2 tsp black pepper, 1/2 tsp Italian Seasoning.

1 1/2 cups shredded cheese

1/2 cup parmesan cheese

How to Make Chicken, Broccoli and Cheese

  1. Heat up your large pan with 2 tbsp of butter or oil.

2. Once the butter has melted place diced carrots and onion into the pot. Cook until softened.

3. Add diced chicken and spices into the pot and cook until the chicken is lightly browned on each side just a few minutes.

4. Add brown rice and stir for a minute.

5. Add bone broth and allow the rice and chicken to cook in the pot on a simmer for about 12 minutes rice should be almost fully cooked.

6. Add the broccoli florets and let cook for another 5 minutes.

7. Add cheese and mix through. Take off the heat and serve!

STORAGE TIPS

Store your leftovers in an airtight container for up to 3-5 days in the refrigerate. I reheat it in on the stove top with some butter until it's warm or you can reheat in the oven.

You can also freeze the leftovers in an airtight container for several months. I'd place it in the fridge and let it defrost during the day or overnight and then reheat in the oven until warmed all the way through

RECIPE VARIATIONS

  1. Add extra vegetables like mushrooms, cauliflower or peas!
  2. Pour the chicken, broccoli and cheese into a casserole dish, top with cheese and let it broil in the oven until cheese is crispy!
  3. Use leftovers in a pie, on top of a salad or in wraps!
