- Ripe Bananas: Ripe bananas blend easier but also are sweeter. They add a lot more flavourful when they are nice and very ripe!
- Adding a bit more extra fat into your banana bread is what helps to keep it extra moist. For this recipe I added plain Greek yoghurt, but you can also add sour cream.
- Let it cook for the full time! Banana bread can take up to an hour to bake but that means the top can go very brown. If the banana bread is looking a bit to brown just go ahead and cover it with aluminium foil and let it continue to finish baking.
Ingredients You Need!

- 3 mashed bananas: Make sure they are nice and ripe for optimal flavour and sweetness.
- 1/2 cup butter: This can be melted or room temperature butter. Room temperature can give your banana bread an even better consistency.
- 1/2 cup plain yoghurt: I use Greek yoghurt because it’s a bit thicker and I want that little less moisture in my banana bread so it cooks faster.
- 1/2 cup honey: Honey keeps it moist and adds some more natural sweetness.
- 1/2 cup rapadura sugar: Or you can use brown or white sugar. I like the taste or rapadura which is similar to brown sugar but healthier for you.
- 2 eggs: Eggs help bind everything together nicely.
- 1 tbsp vanilla: Adds some extra flavour.
- 1 1/2 cups of flour: I have been using white Khorasan flour because it is an ancient grain but you can use any white flour you like. I don’t really use whole meal flours because the final baked product tends to be denser.
- 1 tsp cinnamon or allspice: Either of these adds a lovely flavour to the banana bread and smell.
- 1 tsp baking soda: Helps your banana bread rise.
- 1/2 tsp baking powder: Helps the banana bread to rise.
- Pinch of salt: I personally use sea salt for the health benefits.
How To Make Banana Bread Step By Step
- Preheat oven to 180c/355F
- Mash your ripe bananas in a large bowl.
- Add your wet ingredients to the large bowl with mashed banana. These include melted/ softened butter, yoghurt, honey, eggs and vanilla and mix well.
- Add the sugar, salt and cinnamon and stir well.
- Add the Flour to your bowl and continue to mix.
- Add the baking soda and baking powder and give it another quick mix.

8. Butter or oil a bread pan and pour the banana bread mixture into it.
9. Place the bread pan into the preheated oven and allow to bake for 55 minutes until fully cooked in the middle.
10. If bread is browning too much cover, it with aluminium foil and allow it to finish baking so the centre cooks.

11. Let the banana bread rest on a cooling rack as it will keep cooking in the middle, then slice and serve!
