Sourdough Discard Pizza Roll Recipe
This sourdough discard pizza roll is even better than just your normal homemade pizza made with sourdough discard crust. The dough is soft, buttery and flavourful.
Filled with sauce, melted cheese and whatever meat or vegetable you desire. This is a perfect lunch or dinner option. The dough can be made ahead of time when it’s convenient for you and stored in the fridge for up to 5 days!
These taste so much better and are a lot healthier than the ones you can buy at the shops. Once you start making your own store-bought pizza rolls just won’t cut it. So here’s some tips before we get started.
Tips For Making The Best Pizza Rolls
Here are a few simple tips so that you have the best most delicious pizza rolls!
- Flavour your dough! If you want every bite of these pizza rolls to be delicious add seasonings into your dough while fermenting. It will enhance the flavour drastically!
- Don’t overdo the sauce: You just want a thin layer of sauce. Remember it will be rolled over itself, you don’t want sauce going everywhere making your pizza roll soggy.
- Preheat your oven: Make sure to put these into an already hot oven. They will quickly rise a little more and start to cook nicely.
- Precook vegetables: If you do add any vegetables into your pizza rolls it’s best if you sauté them first to really bring out their flavours.

What You Need To Make Sourdough Pizza Rolls
Ingredients
Flour: I use Khorasan flour, but any white flour will do like spelt or normal white.
Sourdough discard: You will need sourdough discard for this recipe it does not need to be active as it won’t be rising.
Sweetener: I add some honey into this recipe. It really gives this dough a lovely taste. Just a slight sweetness.
Butter: Don’t skimp out on the butter, it keeps this discard pizza rolls soft and adds a delicious taste to them.
Egg: The egg helps to bind all the ingredients and keeps the dough soft.
Milk: You need more liquid in order to mix dough together. You can add water but milk adds more fat which makes the dough richer in taste and texture.
Spices: I add sea salt, garlic powder and Italian seasoning to my dough and let it ferment. This really adds to the flavour of these pizza dough. I also add these spices to the sauce I add in the pizza rolls.
Cheese: What’s pizza without cheese. Shredd up your favourite tasting cheese to add to the inside and on top of these homemade pizza rolls.
Sauce: You can use pasta sauce or tomato paste
Meat or vegetables (optional): Seriously whatever you like! I added sliced ham and cheese on mine, but go for pepperoni, salami, bacon go vegetarian with sauté mushrooms, onion and capsicum! Have fun with it.
Supplies
Bowl: You will need a bowl to mix everything up in for the dough.
Silicone mat or baking paper: This is needed when you are baking your sourdough discard pizza rolls.
Measuring cups and spoons: Love my stainless steel set they last a lifetime if taken care of properly.
Dough Whisk: This is my favourite tool for mixing dough together! Works so well!

How To Make Sourdough Pizza Rolls (Step by Step)
- Mix your wet ingredients together first in a bowl, the melted butter (not too hot just melted), honey, milk, egg*note below* and sourdough discard.
- Add the sea salt, spices and 1 cup of flour at a time while whisking with a dough whisk or fork.
- With your hands form the dough into a ball, place it in a bowl and cover with clingwrap or beeswax wrap for 6-10 hours on the bench and allow it to ferment.
4. Once it’s increased in size add the baking soda and baking powder and knead it into the dough.
5. Preheat the oven to 190c/ 375F.
6. Flatten the sourdough roll out into a rectangle shape with a rolling pin until it is about 1/4 inch thick.
7. Add the sauce, more spices if desired, any vegetable/and or meat and top with cheese.
8. Roll the dough tightly if possible until its a long log shape. Slice 1 to 1.5 inches thick and place on a lined baking tray.
9. Cover with more shredded cheese and place in the oven to bake for about 20-25 minutes. Once cheese is nice and golden on top you can turn the oven off.
10. Take it out of the oven and allow it to cool for another 10 minutes, it’s still cooking on the inside at this point!
11. Then serve and enjoy!
How To Store Pizza Rolls
You can store these pizza rolls in an airtight container in the fridge for up to 5 days. They taste best warmed so heat them in the oven for about 5 minutes, you can top with a little butter to keep it soft and moist.
You can also premake the sourdough pizza roll dough and leave it in the fridge for up to 5 days fermenting. Then take it out and let it come to room temperature and continue to follow the instructions to finish them off.

* If you are uncomfortable adding the egg in at the beginning of the fermentation process you can mix the egg in at the same time you add the baking soda and baking powder. Right before baking! 🙂
