S’mores Ingredients

Butter: The butter makes your cookies soft and melt in your mouth! We cook the butter a bit giving it an almost caramel like taste.

Sugar: You can use whatever sugar you like but I love rapadura sugar. It’s similar to brown sugar and adds a lovely taste to the cookies.

Flour: I use Khorasan flour in all my recipes. It’s an ancient flour which is healthier but has a very similar consistency to white flour.

Eggs: You will need 2 eggs for this recipe to help bind everything together.

Vanilla: Vanilla extract will add a lovely flavour to your cookies!

Cinnamon: To give this cookie a more graham flavour taste we will be adding some lovely fragrant cinnamon spice!

Salt: Sea salt enhances the flavour of the chocolate and adds an amazing taste when you sprinkle some on top of each cookie!

Baking soda: You will need some baking soda to help your cookies rise!

Chocolate Chips: I personally love dark chocolate chips for the outer coating but add any type of dark or milk chocolate square to the centre.

Marshmallows: You can use mini marshmallows or your standard size marshmallow for this recipe. I have tried it, and it works both ways.

How To Make This S’more Cookie Recipe(Step by Step)

  1. The first you want to do is melt the butter in a pan.
  2. Add the brown sugar, sea salt and vanilla to the butter and stir well. Let it cool slightly so it becomes slightly caramelized.
  3. In another bowl add flour and cinnamon powder and mix together.
  4. Crack 2 eggs and mix again.

5. Once the butter mixture has cooled a little add it to your flour until well incorporated.

6. Add the baking soda and mix well. Let your dough cool before the next step.

7. You will about 1/3 cup cookie dough mixture, flatten it out a bit and place a piece of chocolate and marshmallow in the middle.

8. Wrap the chocolate and marshmallow with the cookie dough until it’s a nice ball and set aside.

9. Continue doing this until there is no more dough left.

10. Pour 1 cup of chocolate chips in a bowl and roll each cookie ball into it and place on a plate or baking tray.

11. Once done place the cookie balls into the fridge for 30 minutes.

12. Preheat oven to 180c/355F.

13. Once oven has reached temperature place the cookie balls onto a tray covered with a baking paper or a silicone mat and bake for 12 minutes.

14. Remove from oven and let them cool for about 10 minutes before moving them to a baking tray as they will be very soft still.

You can store the cookies in an airtight container or ziploc bag for about 3 days on the counter, or in the fridge for a week.

You can also store these cookies in the freezer in freezer ziploc bags for about 3 months. Just let them defrost at room temperature and then enjoy when you want to eat them!

Can you freeze cookie dough?

Yep, you sure can. Roll out your balls and place the marshmallow and chocolate inside like normal. Place them on a tray in the freezer.

Once they have frozen put your cookie dough balls into freezer ziploc bags. When you are ready to bake preheat oven and place them on a lined tray.

You will have to bake them longer as they are being baked from frozen!

What are the best marshmallows to use?

I have found both the normal size marshmallows and mini ones to work well. Remember if you are using large marshmallows your cookies are going to be larger too!

Smaller marshmallows mean you can make smaller cookies!
