Butter: You’re going to want a bit of butter for this recipe! I love the taste that butter brings to these brownies and keeps it nice and moist!

Flour: You can use whatever flour you like but I have Khorasan flour (also known as Kamut). It’s an ancient grain but works great in all baked goods.

Dark Chocolate: Get a block of pure dark chocolate 50 to 70 percent is pretty amazing. I generally go for the 70 percent for the rich dark chocolate taste.

Cacao powder: Use per cacao powder not cocoa which has extra sugar and additives.

Eggs: We will be using 3 medium to large size eggs for this recipe.

Sugar: I personally love rapadura sugar it’s similar to brown sugar but healthier. It’s taste great and adds an extra depth of flavour. Pairs really well with the chocolate taste.

Vanilla: A bit of vanilla for that slight vanilla taste.

Baking soda: You will need some baking soda, so your brownies rise a little in the oven.

Salt: I always add a pinch of sea salt to all my recipes. It can also enhance the chocolate flavour while also adding minerals.

Chocolate chips: You can use chocolate chips or the button chocolates for this recipe. You can even add in white chocolate chips for a bit of fun with the colours! Don’t skimp out on the chocolate chips!

  1. Preheat oven to 140c/280F
  2. In a medium size pot melt butter and chocolate.
  3. Mix in sugar, cacao powder, vanilla and salt into the melted butter mixture and stir.
  4. Turn off the heat, add the flour and whisk well.
  5. Add the eggs and continue to whisk.
  6. Whisk through the baking soda and chocolate chips at the end.
  7. Pour batter into 12in by 9in buttered rectangular tray.
  8. Cook for about 25-30 minutes in the oven. The centre should not wobble. Remove from heat and allow to cool for about 20 minutes and enjoy!

Better to undercook than overcook: Tip number one is definitely do not overcook your brownies. Remember they will continue to cook a bit more after you take them out and will set as they cool!

Check the edges: If the edges of your brownies are looking burnt or dry your brownies are overcooking! Take them out before the edges look too cooked!

Let them cool: You want to allow your brownies to set for about 20 minutes. This will make them easier to slice and remove and they will also firm up a bit more.

Good quality chocolate chips: You want nice tasting chocolate chips in your mixture. Buy good quality preferably get chocolate buttons.

These will leave thicker chocolate melting pieces throughout your brownie which are oh so delicious!

You can store your homemade brownies several ways! First always allow your brownies to completely cool before storing them!

You can store them in an airtight container on the shelf away from direct sunlight. Depending on the heat of your house they can last 3 to 5 days in the kitchen cupboard or counter.

Brownies can be stored in an airtight container in the fridge they will last a solid week if not even a little longer. You can eat them cold or reheat them in the microwave or oven!

Another great way to store them is in the freezer! Once again make sure they are completely cooled before placing them in an airtight container in the freezer.

Just pop them out and leave them on the counter or in the fridge to defrost and enjoy!

They will last a good 3 months in the freezer!
