It tastes best nice and warm out of the oven. It’s extra delicious sliced with a bit of butter slathered on top. You get the sweetness from apples, a subtle warming taste from the cinnamon and the butter in this recipe helps the bread to melt effortlessly in your mouth.

Ingredients You Need

There are a few things you are going to need to make this recipe!

Sourdough Discard: This recipe uses solely sourdough discard no extra flour! You will need 2 cups of sourdough discard.

Butter: You will need butter or some sort of nice or bland flavoured oil to make is moist and melt in your mouth.

Apple: You only need one medium to large size apple peeled and chopped finely for this recipe.

Sweetener: I use rapadura sugar it tastes similar to brown sugar but a lot healthier. You can use honey, maple syrup or raw sugar.

Eggs: You will need 2 eggs for this recipe medium size eggs are ideal.

Vanilla: A bit of vanilla gives it an extra lovely taste.

Cinnamon: You will want some cinnamon or allspice to give it that lovely flavour that goes so well with apples.

Salt: A little sea salt or Himalayan salt gives it that extra flavour.

Baking Soda: You will need a little baking soda to help your bread rise in the oven.

Equipment Needed

You do not need much for this recipe!

  1. Bread Pan: A bread pan is important if you are wanting to make a loaf! I love my stainless steel one it works great, but any bread pan will do!
  2. Bowls: You will need a couple of bowls for mixing the ingredients into.
  3. Knife and Peeler: You will need a knife and peeler for peeling and slicing your apples.
  4. Measuring Cups and Spoons: Always a handy tool to have for measuring out your ingredients for a more accurate result!

Step By Step Sourdough Apple Bread Instructions

  1. Preheat your oven to 180c/ 350F. Peel and dice one large apple into small chunks.

2. Mix the apple, sugar and cinnamon together in a bowl.

3. In a separate bowl mix the sourdough discard, salt, melted butter, sugar, vanilla, eggs and cinnamon together.

4. Add the baking soda in at the end and give it a mix.

5. Butter or oil a bread pan and pour half the sourdough mixture into it.

6. Place the Apple mixture into the bread pan and swirl slightly.

7. Top with the rest of the sourdough mixture and then place in the oven to bake for 50 minutes until it’s nice golden brown on top.

8. Take it out of the oven and allow it to cool on a cooling rack for another half an hour.

9. If you want to add a cinnamon glaze simply mix the powdered sugar, cinnamon powder with milk or water until it’s a runny consistency and pour on top of your slightly cooled loaf.

10. Slice your loaf after about 30 minutes and enjoy as is, with cream or topped with butter!

Sourdough Discard Apple Bread Tips

  1. You want to make sure you start with a very thick sourdough starter. It should be scoopable and thick!
  2. I cut the apples on the slightly smaller size so they cook well through. But if you want a little crunch, you can cut them thicker.
  3. You can use any apples for this recipe just fine.
  4. Swap out the cinnamon for allspice if you want it gives it an amazing taste!
  5. You can easily turn this recipe into sourdough apple muffins. Just pour the mixture into muffin trays and bake for about 25 minutes and enjoy!

How To Store Apple Bread

You can store your bread in an airtight container for about 3 days on the counter away from direct sunlight.

The Sourdough apple bread can be stored in the fridge in an airtight container for up to a week. If you don’t add the glaze on top, it tastes really lovely toasted with butter.

You can pre slice this loaf, place it into an airtight freezer bag and freeze it for later. When you want it take it out of the freezer and place in the fridge. I prefer it slightly toasted after it’s been in the freezer or fridge. You can toast it in a toaster as it warms it up and dries it out a little more or in the oven!

  • 1/2 cup sugar (I use Rapadura sugar)
