Traditional chicken noodle soup has always been known as a nourishing soup for aches, cold and flus. When it’s cold outside and your body needs something warm, nourishing and nutritious chicken noodle soup has been the go-to recipe.

The warm soup is comforting on a cold day and oh so satisfying. There are a few reasons why this soup helps to nourish the body. I’ll list some reasons below!

  1. The broth itself helps keep your body hydrated. It’s loaded with electrolytes and minerals your body needs to help fight the cold and flu.
  2. The herbs such as garlic and pepper that are normally used in chicken noodle soup can help to loosen mucus when you are congested.
  3. The chicken itself is generally pretty gentle on the stomach, gives your body the protein it needs when you are sick. It contains several things in it as well that can help with congestion.
  4. The noodles are a gentle on the stomach and are a simple energy source for the body as well.
  5. The vegetables in the soup give your bodies vitamins and minerals which help keep your immune system strong to fight of sickness.

Ingredients For Chicken Noodle Soup

There are a few key ingredients you will need for this recipe!

  1. Bone broth: I highly recommend making your own homemade bone broth. But if you don’t have time, you can slow cook your ingredients to leach more minerals out of the water when cooking or buy a healthier broth from the store. Make sure to look at the labels and see what the ingredients are first!
  2. Chicken: You can add chicken breast straight into a boiling pot of broth and let it cook. Or what I normally do is shred a rotisserie chicken and put that into my soup. You can do either option just fine.
  3. Vegetables: Add whatever vegetables your heart desires. For this recipe I recommend chopped carrots, celery, onion and garlic! These classic flavours wont disappoint!
  4. Herbs: Now you can play around with the herbs I absolutely love parsley in my soup. When I have I really do love to add coriander and thyme as well. These make the soup extra flavourful and delicious! Add at least one herbs it can be fresh or dried. Fresh does have a better, stronger taste I have found though!
  5. Spices: I recommend adding salt, pepper and if you don’t have fresh garlic adding in garlic powder! This time around I did not have fresh celery, but I had celery powder I made instead so added that into my recipe. You can play around with fresh and dried ingredients.
  6. Noodles: I personally love using egg noodles in my chicken noodle soup. They taste delicious, cook pretty fast and you get a little extra protein in that way. Any noodles would be fine though.

How To Make Chicken Noodle Soup?

  1. Melt butter in the pan and sauté the carrots, onion and celery. Add the herbs and spices while vegetables are sautéing. Sautee the vegetables until almost soft.
  2. Add 8 cups of bone broth and let it go to a simmer.
  3. If using raw chicken add chicken thighs or chicken breast and let it cook in the broth for about 20 minutes. Then remove and cut into pieces.
  4. If using rotisserie chicken add egg noodles first and let them cook for about 6 minutes in the simmering broth.
  5. Once noodles are cooked add the cooked shredded chicken into your soup.
  6. Serve into bowls and add a bit of parsley on top if desired.

Tips On Making A Flavourful Chicken Noodle Soup

Here are a few tips make your chicken noodle soup that much better!

  1. Sauté the vegetables in butter and add some spices onto them. Slow cooking them and adding the spices really brings out the flavour in your soup. It really makes a difference if you sauté first instead of just throwing in raw vegetables and letting it cook in the liquid.
  2. Use homemade broth, if possible, instead of store-bought broth. Homemade broth just can’t be beat I promise it’s so worth it, easy and amazing!
  3. Don’t skimp on the salt. Salt really does add good flavour. Make sure to use a good quality salt like sea salt.
  4. If you don’t have fresh herbs, make sure your dried herbs aren’t old. Dried herbs can lose their potency with time and lack the flavour you so desire!

How To Make This Soup Ahead Of Time

There are several things you can do to really get this soup done quickly! Here are a few make ahead ideas if you have that little bit of extra time during the day! Overall, this soup is still pretty quick and easy to make!

  1. Pre chop the vegetables you need and keep them in an airtight container in the fridge! The longest part of most recipes is the prep work. If you pre chop the vegetables that saves you time and also less dishes later on!
  2. Either precook the chicken and shred it or buy a rotisserie chicken and shred the meat. I personally shred rotisserie chicken and shred it as we eat chicken regularly for many different meals! This can save a bit of time later on. Store the chicken in an airtight container in the fridge.

How To Store Chicken Noodle Soup?

There are several ways you can store chicken noodle soup. You can keep it in your fridge for several days in an airtight container.

I have kept mine up to 5 days maximum if I have made an extra-large batch. We do always eat it up!

You can let it cool completely and then either put in a ziploc freezer bag and place in the freezer. Or place it in an airtight container leaving a couple inches space from the top as the liquid will expand and place in the freezer.

It will last several months in the freezer. Simply take it out let it defrost slightly and heat it up in a pot like normal.

  • 2 cups shredded chicken or 5-6 chicken thighs
  • 1 large onion chopped
  • 2 carrots diced
  • 2 celery sticks diced
  • 5 sprigs thyme (optional)
  • 1/4 cup fresh parsley or (1 tbsp dried parsley)
  • 1/4 cup coriander (optional but delicious)
  • 250g egg noodles
  • 1 tbsp sea salt
  • 1 tsp black pepper
  • 1 tsp garlic powder or 2 crushed fresh garlic cloves
