Fluffy Sourdough Discard Pancake Recipe

Breakfast is one of our favourite meals of the day! There are so many delicious options, and this sourdough discard pancake recipe is one of them! Along with Sourdough Discard Waffles which is our top breakfast option, these pancakes come in 2nd.

They are light, fluffy, melt in the mouth and are easy and quick to make. You can make lots of small ones or a few large pancakes.

Why Make Sourdough Pancakes

If you want a healthier breakfast option sourdough is the way to go. Fermenting your flour can reduce gluten levels and makes the nutrients levels higher as well!

If you have a lot of discard, which is non active sourdough starter you can use it up easily making pancakes. This Sourdough discard pancake is quick, easy and healthier than just normal pancakes.

The flavour is more in depth with sourdough it gives it a slight tang that you just don’t get with non-sourdough pancakes.

Sourdough Pancake Tips

  1. Make sure your starter is very thick at the beginning. You want a thick scoopable discard as you will be adding extra liquid to it making your batter thinner. A thicker starter will mean a thicker batter, so you have fluffier pancakes.
  2. Make sure your pan is nice and hot before placing pancake mixture onto it for nicer pancakes.
  3. Try and only flip the pancakes over one time so they stay nice and fluffy. Too much flipping can deflate your pancakes.

There are several ingredients you will need for this recipe.

  1. Sourdough discard. I like to have about 2 extra cups of sourdough discard in my container at all times. This way you can easily whip up waffles, pancakes or pizza crust!
  2. Eggs: You will only need one egg for this recipe! I go for a larger egg if you have.
  3. Sweetener: You will want to add some sugar or liquid sweetener to your mixture it gives it a lovely slightly sweetened taste.
  4. Sea salt: I always add a pinch of salt to enhance flavour of food.
  5. Milk Kefir, butter or buttermilk: I only add 2 tablespoons of liquid to my mix as you want the mixture pretty thick. Milk kefir and buttermilk in particular will give you a lighter, fluffier pancake.
  6. Baking soda: Will give your pancakes a bit more of a rise so they are nice and fluffy.

Supplies Needed

You will need just a couple supplies for this recipe which you should already have at home.

  1. Bowl: You will need a bowl for mixing your ingredients into.
  2. Non stick pan: You will need some sort of frying pan to cook your sourdough discard pancake on. I use cast iron and love it but any non stick pan will do.
  3. Spatula: You will need a spatula to help you flip your pancakes.

How To Make Sourdough Discard Pancakes

This is a super easy recipe.

  1. Get your pan heating up with a bit of butter or oil.
  2. Place all your ingredients in a large bowl.
  3. Mix it all together until you have a pourable mixture it should still be pretty thick.
  4. Once your pan is hot should be on about medium heat start pouring your pancake mix into it. You can make singular large ones or several small ones.
  5. Once you notice quit a few bubbles forming on top you will flip your pancakes over.
  6. Let them cook for about another minute on the other side and then remove the pancakes.
  7. Serve with whatever toppings you love best. We do enjoy a slather of butter and maple syrup on ours!

How To Store Sourdough Discard Pancakes

If you have extra pancakes, you can store them in an airtight container in the fridge. They seem to last pretty well for up to a week. We pretty much always eat them way before then though.

You can also bulk make these for a later day and freeze. Once you have made your desired number of pancakes let them cool. Place them in freezer ziploc bags, I like to separate layers with baking paper to make sure they don’t stick to each other.

They will last months in the freezer no issues. Just take them out and let them defrost when you want to eat them!
